Well, it’s safety is quite simply not established ,and in fact it is outlawed in India, prohibited in the European Union and has been illegal in the United Kingdom since 1990, 31 years ago!

Only the slow witted FDA has not seen the evidence and had the sense to ban it from all flour and foodstuffs on the grounds of its carcinogenity. So I’m afraid it’s only in America again, not the World.

It’s been used as dough— conditioner/ dough maturing agent Since 1960s!

It's use as a flour/ dough additive was described by john Brayden.

When it is used in bread/ whole wheat flour, it gives finer resilient texture apparently, looking whiter crumb!

*It destroys no vitamin when used better than other flour additive vitamin-C/ bromide!

*But it is not actually a bleaching agent!

*It is an FDA approved food additive in US/ Hong Kong/ canada ( E927)….. but it is phased out in UK/Australia after NEGATIVE PUBLICITY since the same compound is also used as blowing agent in plastics!

This compound when used in baked foods forms biurea, then gases N2 ,CO2… and little bit carbazide left over!( CARCINOGENIC)

This additives can be found in bread brands MCDONALD'S or SUBWAYS!
