Summary: Trans-2-hexenol is a volatile component of tea and was detected in tea in 1966. Colorless liquid, slightly soluble in water, soluble in ethanol and other organic solvents, boiling point 155℃, relative density 0.8498(16/4℃), refractive index 1.4367(20℃), a strong grass odor. The contents of tea in fresh leaves and finished tea increased greatly in the wilting stage, and then decreased with fermentation and drying.
Chemical properties: almost colorless liquid. Strong unripe fruit odor. Boiling point 158℃, flash point 53.9℃. Soluble in ethanol, propylene glycol and most non-volatile oils, very slightly soluble in water.
Synthesis method: A mechanical probe with (Z) -2-hexene-1-ol (174) and n-butyllithium (2.5M hexane, 0.5mL, 1.25mmol) was added to alcohol (174) (0.145mL, 1.22mmol) in a cooled (0℃) solution in THF (8mL). Degassed the alkoxide twice before adding the catalyst through the casing: (a) [Rh (dppe) COD]ClO4 (44.5mg, 0.063mmol) in THF (12mL). In this case, the reaction was reflow for 5 minutes and then quenched with saturated ammonium chloride aqueous solution (10mL). The layers were separated and the aqueous phase was extracted with ethyl ether (2x10mL). The combined organic phase is washed with salt water (10ml), dried (MgSO4) and evaporated. NMR analysis was performed for each crude reaction mixture. Finally, the synthesized compound was identified as trans-2-hexenol.
